I have been spending some time with my Parents collecting stories and pictures of my ancestors and digitizing them. I hope to put together a little video production in the near future. Anyway, one of my ancestors comes from Spain and so this recipe caught my eye. I really liked it.

Catalan Spinach
           from an article in the Wall Street Journal by Chef Jose Andres 

2 Tab olive oil
1 Golden Delicious apple, cut into 1/4 inch dice
4 Tab pine nuts
4 Tab seedless raisins
10 ounces baby spinach

Add 2 Tab oil to a large saute pan over high heat. Once hot, add apples and cook until caramelized on all sides, 2 to 3 minutes. Add nuts and stir until lightly toasted, about 30 seconds. Add raisins and continue stirring until heated through, about 30 seconds. Add spinach and toss until just wilted, 1 to 2 minutes. Remove from heat and season with salt.
